Thai Glass Noodle Salad

Thai Glass Noodle Salad


1 – carrot
1 – zucchini
1 – Small head of broccoli
2 – Spring onions
1 - cloves of garlic crushed
1 – handful, fresh chopped coriander
75g roasted red capsicum [sweet pepper]

25ml rice oil
100g package of vermicelli rice [glass] noodles
Equal Amounts of:
Thai fish sauce
Water
Lime-juice
Grated palm sugar
Sea salt

2 – Tbsp roasted sesame seeds
1 – dried jalapeno pepper thinly sliced
Cracked pepper to taste

Directions;

Grate both carrot and zucchini into a bowl. Finely chop head of broccoli and add to bowl. Char grill red capsicum over open flame until black. Rest in a zip-lock plastic bag. Peel loose skin once cool and slice finely adding to bowl. Chop fresh coriander and add to mixture stirring through. Add chopped glass noodles.

In a separate bowl, add equal amounts of Thai fish sauce, water, grated palm sugar, lime juice and sea salt. Dissolve both salt and palm sugar in the liquid. Add roasted sesame seeds, thinly sliced dried chili and cracked pepper to taste. Slowly add rice oil and emulsify mixture. Taste and adjust if necessary, it should be a balanced taste of sweet, sour, hot and bitter. Pour liquid over grated vegetable and noodle mixture and stir through – serve cold.

Fish Chowder

Fish Chowder


Ingredients

1 – carrot
5 – stalks of celery
2 - cloves of garlic
1 – large onion
1 – handful, fresh chopped parsley or coriander
4 – medium / large potatoes
200g shitake mushrooms
200g finely chopped bacon

500g fish [any]
25ml rice oil
2 Tbsp butter or margarine
100ml white wine
500ml full cream milk
500ml fish or chicken stock
1 – can coconut milk
10ml Thai fish sauce
1 – tsp cayenne pepper
1 – dried jalapeno pepper
Sea salt and cracked pepper to taste

Directions;

Chop carrot, celery, onion garlic and mushrooms and add to large pot. Add rice oil and butter sweating until soft, adding sea salt, pepper, fish sauce and chopped dried jalapeno pepper. When softened, add white wine, stock and milk to pot and bring to slow boil. Once boiling gently, add potatoes and reduce heat slightly, cooking for another 20 minutes. When potatoes soften add cubed fish pieces and reduce heat further, stirring occasionally. In a separate fry pan sauté bacon pieces until brown but still soft. Add to chowder. Finally add coconut milk and stir through until heated. Serve with toasted french bread.

Recipe - Frozen Espresso Mousse

Frozen Espresso Mousse
With Chocolate Tia-Maria Sauce

Serves 4
Ingredients

*Chocolate Sauce *Espresso Mousse

½ cup of castor sugar ½ cup of castor sugar
50g of chopped dark chocolate ½ cup of freshly brewed espresso coffee
100ml of Kahlua or Tia-Maria 4 egg yolks
2 Tbs finely ground espresso coffee
2 Tbs Kahlua or Tia-Maria
1 cup pouring cream-whipped to soft peaks



Directions

For chocolate sauce, combine sugar with ¼ cup water in a small saucepan without stirring. Slowly bring to a simmer. Increase heat and boil for 5 minutes or until deep golden, then quickly remove from heat and add ½ cup of water take care as the mixture will spit hot liquid. Return mixture to low heat and stir for 5 minutes or until smooth. Cool slightly, then stir in chocolate and liqueur, stirring until chocolate melts and mixture is smooth. Cool. Thin sauce with a little boiling water if it thickens too much on standing. Store chocolate sauce in refrigerator and bring to room temperature before serving.

For Mousse, combine sugar and coffee in a small saucepan, stir over medium heat for 5 minutes or until sugar dissolves, then boil for 3 minutes and remove from heat. Cool slightly. Using an electric mixer, whisk egg yolks until pale and thick and mixture holds a trail. With motor running, slowly pour hot coffee syrup onto yolks in a thin stream, whisk at high speed until mixture is cool, then stir in ground coffee and liqueur until just combined. Gently fold in cream, then divide amongst 4 chilled 200ml glasses and freeze for 8 hours or overnight. Serve frozen mousse with dark chocolate shavings on top and chocolate sauce served in shot glass on the side. Divine.
